Our Chef prepares the island’s products with great talent, offering a cuisine that is as innovative as it is fine.
Potato rarebit with truffles and sea salt - superb! Roasted langoustine, fried vegetable ravioli, with spicy and seasoned poultry stock. Sole filet, lamb sweetbreads, and apple charlotte. Turbot filet with morels and Chinon wine sauce, served with vegetable spaghettis. Canette (young female duck) raised by Burgaud, variety meat pastilla in cabbage-leaf (“feuille de choux”) decor, preserved shallots, frittered apples.
And to finish your meal, a wide and colourful range of homemade desserts!
